Below are a few tools you’ll need to gather before we get started — some you might already have in your kitchen, and others may have come in your Sourdough Mate kit.
What you will need:
An active starter
Your sourdough journey starts here. Inside your Sourdough Mate kit are dried wheat starter flakes just waiting to be activated — brought to life and ready to help you bake incredible sourdough bread.
High-protein wheat flour
We use high-protein wheat flour in all our recipes — it's what gives sourdough its structure and beautiful chew. Here's what's included in your kit:
Classic Wheat Sourdough Kit — 2kg white high-protein flour
Deluxe Wheat Sourdough Kit — 2kg white high-protein flour & 1kg stoneground wholegrain flour
Wheat Starter Basic Tool Kit — No flour included. We recommend sourcing a good quality high-protein flour from your local supplier. See our range of organic stoneground Australian flours.
Half moon bowl scraper
An essential tool useful for moving and tidying up dough on benches and inside bowls.
Danish dough whisk
An essential tool used to help mix dough, its spiral shape cuts through thick, sticky mixtures much more easily than a spoon or spatula — without overworking the dough or making a mess.
If using a KitchenAid (recommended for dough sizes over 1.5kg) use a dough hook and not a paddle.
Silicon bread sling
A reusable baking paper that helps you safely lower your shaped dough into a hot Dutch oven — and lift it out again — without burning your hands or deflating your loaf. Included in Deluxe Kits or shop silicon bread slings.
Small jar with lid
An old jam jar that has been cleaned and sterilised works well. Shop sourdough starter jar here.
Kitchen scale
Useful for weighing all types of ingredients - flour, water, salt. Shop rechargeable kitchen scale.
Large mixing bowl
We recommend using a large mixing bowl to allow plenty of room for the dough to grow. In our videos, we use a Pyrex 24 cm / 3 L glass mixing bowl covered with a tea towel. If you prefer a purpose-built option is available, shop our sourdough mixing bowl with lid is designed especially for sourdough baking.

Cast iron Dutch oven
Home oven
Make sure your oven can reach a high temperature of at least 230–250°C, as this is essential for baking bread.

Activating your starter flakes is the first step. Please allow for 24 hours before an active starter is achieved.
