FREQUENTLY ASK QUESTIONS
Why this flour is different from supermarket gluten-free flour?
Most supermarket gluten-free flours are made for quick baking like cakes or muffins — not the slow fermentation needed for sourdough. They often include additives that can interfere with starter activity and the growth of beneficial bacteria and natural yeast, making it much harder to achieve a strong, well-risen loaf.
In short, this flour is purpose-built for gluten-free sourdough — not just a general baking substitute.
What makes this gluten-free flour different for sourdough?
Most gluten-free flours simply aren’t designed for sourdough baking — which is why so many people struggle with flat, dense loaves.
Our blend is carefully formulated to behave more like traditional bread flour, making sourdough baking not only possible, but reliable.
- High protein (11%) — Rare in gluten-free flour, helping improve structure, rise, and overall texture
- Designed for fermentation — Supports a healthy, active sourdough starter and proper dough development
- Improved structure and texture — Instead of dense or crumbly results, you’ll achieve a lighter, more cohesive crumb that holds together.

Is this flour suitable for gluten-free, FODMAP-friendly, or plant-based diets?
Yes! This flour is safe for Coeliacs (approved by Coeliac Australia), low GI, plant-based, FODMAP-friendly, and gut-friendly, with 15% prebiotic fibre and low sodium.

I have been making this for over 6 months. My starter is strong and I have frozen it while travelling only to defrost and start it up again when home. Cannot recommend this enough.
Excellent flour, makes wonderful GF bread with a crispy crust and soft inside
Customer service is great and I love this flour for making gluten free bread. It really is the best, completely worth the price!
I have been gluten free for 20’ish years and always thought baking gluten free bread would be too difficult. The gluten free kit from Wild Sourdough has proven me wrong. I’m loving the sourdough I’m baking now and won’t go back to supermarket gluten free loaves.
When I ordered 5kg of flour, I thought "what am I going to do with all this?" But once I'd made my first loaf, I know it'd come in very handy. Yet to expand my skills of making anything other than sourdough with it, but going to attempt wraps, pizza dough and bread and super excited about it, knowing how easy it is to work with!! :)
It’s the best GF flour to work with and the taste is wonderful. I can’t wait to use it more.
Makes beautiful bread!
Thank you for your flour. Finding this has made the learning curve so much easier, I am able to avoid store bought bread and make my own delicious gluten free sourdough.
I started making sourdough using just the white flour, which makes a lovely loaf, but I wanted to add a bit of extra fibre to my diet so decided to try an 80% white flour and 20% wholemeal flour and it makes a delicious difference and there's definitely extra flavour.
If you want to up your sourdough repertoire, I would highly recommend Sourdough Mate Wholemeal Gluten-Free Bread Flour.
I am enjoying using the Gluten Free wholemeal Flour.
