We don’t recommend feeding your starter with highly processed gluten-free flours containing additives such as emulsifiers or raising agents. Always check the ingredients before using a flour to feed your starter.

When building a levain for your gluten-free sourdough, we don’t recommend using brown rice flour alone. It may not provide enough fermentation strength to support a light, airy loaf, resulting in a denser, flatter finish.
