A high-protein white bread flour is specially designed for artisan sourdough and long-fermentation breads. Its high protein content creates a strong gluten structure, ensuring your loaves rise beautifully with a soft, tender crumb and rich, naturally delicious flavour.
Produced by roller-milling the whole wheat grain and carefully sieving off only the bran, it retains a substantial proportion of wheat’s natural nutrients, giving your bread extra flavour and texture.
Made from a hard wheat variety, this flour has a creamy colour, rich taste, and strong texture — perfect for creating artisan-style sourdough breads with excellent rise, structure, and taste.

After starting my own sourdough journey over three years ago, making two loaves a week…every week, there comes a time to start experimenting! Want more spring, or perhaps a longer proof to really emphasise those fragrant notes and drive flavour into the crust. Flour sources are the place to start. Finding a source of flours which are fresh is a challenge. Old flours in sourdough undermine what we all are trying to achieve. The perfect loaf!
