After starting my own sourdough journey over three years ago, making two loaves a week…every week, there comes a time to start experimenting! Want more spring, or perhaps a longer proof to really emphasise those fragrant notes and drive flavour into the crust. Flour sources are the place to start. Finding a source of flours which are fresh is a challenge. Old flours in sourdough undermine what we all are trying to achieve. The perfect loaf!

I had only used white bread flour for my sourdough but now include this flour in my mix and it is delicious. I also now have your gran and soy and linseed.
