What makes Sourdough Mate proving bannetons better than others?

Our bannetons are handcrafted using sustainably sourced bamboo cane, often referred to as rattan, offering a natural and traditional proving experience. Unlike many plastic alternatives, no harsh chemicals are used during production.

Each banneton is constructed with hidden stainless steel staples designed not to rust or discolour over time. Every cane banneton also includes a 100% natural organic cotton liner with quality stitching, custom made to fit perfectly snug.

Why is the final prove so important?

The final prove is one of the most important stages in bread making. It allows the dough to fully develop flavour, texture and structure before baking. During this stage, the dough continues to ferment and rise, creating the light crumb and beautiful oven spring that make sourdough so special.

Proper proving also helps the dough hold its shape and improves scoring results, leading to a well-shaped loaf with a crisp crust and balanced interior. From maintaining the right temperature to properly supporting the dough during its final rise, every detail plays an important role in the finished bread.
