WHAT IS A LAME?
A lame (French for “blade) or baker’s blade is used to score/slash bread dough. This is done prior to baking to help facilitate/control the dough’s expansion during the baking process. The position of the score will dictate where the bread loaf will open or bloom and also gives a decorative appeal to the finished loaf.
