Organic Australian Foster Heritage Wheat Flour

A premium single-origin Australian heritage wheat flour for bakers who want exceptional flavour and dough performance. This roller-milled bakers white flour is made from Foster wheat, a rare heritage variety grown by Murphy Farming in Central Queensland.

Foster produces a supple, extensible dough that is easy to stretch, shape and handle, making it particularly well suited to naturally leavened breads. Its strength and extensibility allow the dough to expand during fermentation and baking, helping you achieve well-developed loaves with an open, airy crumb and excellent volume.

The flour also brings a distinctive depth of flavour to the finished bread, giving sourdough and artisan loaves more character than you would expect from a standard white flour.

Why bakers love Foster:

  • Single-origin grain — made from Foster wheat grown on one farm, rather than a blend of wheat from multiple sources.
  • Highly extensible dough — stretches easily without tearing, making shaping more forgiving.
  • Excellent fermentation performance — handles long fermentation and naturally leavened doughs beautifully.
  • Great oven spring — supports strong expansion for taller, lighter loaves.
  • Open crumb potential — ideal for bakers chasing a light, airy interior.
  • Exceptional flavour — brings greater grain character and depth to the finished loaf.
  • Versatile white flour — refined enough for a lighter crumb while retaining the distinctive qualities of the heritage wheat.

Grown as a single-estate wheat and certified organic, Foster gives you the performance you need for ambitious baking, with the added satisfaction of working with a rare piece of Australian agricultural heritage.

What is Foster wheat?

Foster is an Australian heritage wheat variety developed in Queensland through traditional plant breeding. It is one of a small number of older wheat varieties still grown commercially today.

For bakers, Foster offers the opportunity to work with a wheat that brings a distinctive character to the finished loaf, adding depth of flavour and a connection to Australia’s agricultural heritage.

What is heritage wheat?

Heritage wheat refers to older wheat varieties that were grown before many of today’s modern commercial varieties were developed. These grains are valued for their agricultural history, genetic diversity and unique baking characteristics.

Choosing a heritage wheat like Foster gives you more than just flour — it brings distinctive grain character and flavour to your baking, while supporting the continued cultivation of these traditional Australian varieties.

About the farmer

This wheat is grown by Paul and Cherry Murphy near Capella in Central Queensland. Passionate advocates for heritage grains, they have played an important role in preserving Foster wheat and keeping it in cultivation for future generations.

Their farm combines certified organic practices with a commitment to growing older wheat varieties that might otherwise have disappeared from Australian agriculture.
